Application areas of enzyme preparations


The enzyme preparation industry is a high-tech industry, which is characterized by less dosage, high catalytic efficiency and strong specificity, and is an industry serving other related industries. Its application fields cover light industry, food, chemical industry, medicine, agriculture, energy, environmental protection and so on.

Food field

There are many types of food enzyme preparations in China. Among them, carbohydrate enzymes, protein enzymes, and dairy enzymes account for a large proportion of food enzyme preparations, accounting for 81.7%. Enzyme preparations commonly used in food processing mainly include the following: papain, transglutaminase, elastase, lysozyme, lipase, glucose oxidase, isoamylase, cellulase, superoxide dismutase Enzymes, bromelain, ficin, ginger protease, etc.

Enzyme preparations that have been approved for use in the food industry in China include α-amylase, saccharification enzyme, immobilized glucose isomerase, papain, pectinase, β-glucanase, grape oxidase, α-acetolactate deamination Enzymes, etc., are mainly used in fruit and vegetable processing, baking, dairy processing, etc.

The amylase industry has developed rapidly, the output has doubled, and the variety has gradually increased. By 2006, the output has exceeded 5 million tons. The residual protein content of starch and the gelatinization properties of starch in the enzymatic wet milling process were better than those in the traditional wet milling process. Due to the addition of protease, not only the soaking time is shortened, but the yield of protein is not reduced but improved. New enzyme preparations are being used in the production of injection glucose, liquid glucose syrup, high maltose syrup, high fructose syrup and various oligosaccharides. The replacement of sucrose by starch sugar has been used in food processing, candy, beer and beverage production.

In the 1980s, textile enzyme preparations represented by amylase, protease, cellulase, etc., were mainly used for fabric desizing, denim finishing and silk degumming, etc. Technology began to emerge. After entering the 21st century, the application fields of Chinese enzyme preparations in the textile industry have gradually expanded, including fiber modification, raw hemp degumming, pre-treatment of printing and dyeing, treatment of printing and dyeing wastewater, and garment processing. At present, the processing technology of enzyme preparations for textiles has been involved in almost all textile wet processing fields, and the market size has shown a steady increasing trend.

feed industry

Feed enzyme preparation is a new type of feed additive that has emerged with the continuous development of feed industry and enzyme preparation industry in recent years. It has the functions of improving nutrient digestibility, improving the quality and stability of compound feed, and reducing environmental pollution. As a kind of green feed additive with high efficiency, non-toxicity, no side effect and environmental protection, feed enzyme preparation has become the fastest growing and most powerful part in the world industrial enzyme industry, and its application effect has been recognized worldwide. Chinese feed enzymes have been added to feeds since the 1980s.

At present, there are more than 20 kinds of feed enzymes in China, mainly including: amylase, protease, xylanase, β-mannanase, cellulase, β-glucanase, phytase and compound enzymes. These enzyme preparations can be divided into two categories: 1) Mainly degrade polysaccharides and biological macromolecules, including protease, lipase, amylase, saccharification, cellulase, xylanase, and mannanase. The main function is to destroy the plant cell wall, so that the cell contents can be fully released; 2) It mainly degrades anti-nutritional factors such as phytic acid, β-glucan and pectin, mainly including phytase, β-glucanase and Pectinase, its main function is to degrade cell wall xylan and intercellular pectin components, improve the utilization rate of feed.
